Burn], para identificar las condiciones óptimas de cosecha(Universidad Pedagógica y Tecnológica de Colombia, 2015) Poveda Pérez, Jhon Alexander; Pinto Medina, Darío AlbertoThis investigation had as mean goal got the physicochemical and physiological parameters of pear ev. Triunfo de Viena (Pyrus communis L.) about its seven states of maturity, stored at a temperature of 18,8 °C, and at relative humidity of 52.2% improving in the agroindustrial extension of investigation unit that being part of Technological and Pedagogical University of Colombia. The fruits measurements were performed for 15 days, since they were harvested. The applied testing were lost weight, ° brix, pH, titratable acidity, intensity rate, and firmness. The pear is a climacteric fruit, and it should harvest when the intensity rate is minimum, which facilitate post-harvest handling, and make last Storage time, delaying menopause reducing the physiological changes, like starch hydrolysis, increase in total soluble solids, , Fading and changing protopectin, responsible for the loss of firmness and flesh firmness. During the investigation a decrease in the percentage of malic acid dominant pear, firmness and pH was evident; mainly caused by the high respiratory intensity that kept the fruits and added to this storage conditions (room temperature) which were exposed to each of the stages of maturity. In the first data presented firmness values of 0.3 to 0.4 kg / square inch, total soluble solids of 8.53 ° to 11.13 ° Brix, pH of 3.40 to 3.68, titratable acidity of 0.21% to 0.29% (% malic acid), respiratory rate of CO2 10.43 mg / Kg of fruit * minute CO2 15.40 mg / kg * min and fruit loss weight 3.11% to 4.76%, constant variations observed during the fifteen days of the investigation.
